chicken and waffles with honey butter and tomato jam (recipe below)



Belgian waffles


1 3/4 cups flour
1 tablespoon baking powder
1/2 teaspoon salt
1 3/4 cup milk
2 large eggs
1/2 cup melted butter
1 teaspoon vanilla extract

Whisk all of the dry ingredients together in a medium bowl. In another bowl, beat the milk, eggs, melted butter, and vanilla extract. Pour the milk mixture over the dry mixture and stir until just combined. Let sit for at least five minutes for the baking powder to activate. Pour or ladle per your waffle iron instructions. Makes about 5 Belgian waffles.  


Fried chicken tenders

1 1/2 pounds skinless, boneless chicken breast tenders
2 cups buttermilk
3 cups self-rising flour
1/2 cup cornstarch
2 tablespoons sea salt
4 tablespoons paprika
1 teasppon baking sodar
1 teaspoon sugar 
1/2 teaspoon garlic powder
vegetable or canola oil for frying


Put the chicken tenders in a bowl and pour the buttermilk over them.  Cover and put in fridge.  Whisk dry ingredients together in a large bowl or gallon sized Ziploc bag for easy cleanup. Remove 4 or 5 tenders at a time from the buttermilk and toss in the breading mixture.  Make sure the tenders are well coated.  Transfer to a baking sheet and let rest until the breading adheres, 15 to 20 minutes.  While the chicken rests, add 2 inches of oil to a large (at least 6-quart) pot and heat to 300°F. Working in batches, fry 4 to 5 tenders at a time until brown and crisp, about 4 to 5 minutes per batch. Remove to a cooling rack or paper towel to drain.


Tomato jam

1/2 pound ripe tomatoes (I used grape tomatoes since that was what I had.)
1 cup sugar
2 tablespoons lime juice
1 teaspoon ground cumin
1/4 teaspoon ground cloves
1 teaspoon salt

Combine all ingredients in a saucepan and bring to a boil over medium heat, stirring often. Reduce heat and simmer, stirring occasionally until mixture has consistency of thick jam. Adjust seasoning to taste.  


Honey butter

1/2 cup (1 stick) unsalted butter at room temperature
2 tablespoons honey

Add butter and honey to a bowl and beat until combined.


Once everything is done, assemble and plate to your liking.
